Pumpkin Pie Spice

It’s that time of year. Pumpkins are in season, which means Pumpkin Pie Spice. Sure, you can buy it at the store, but in a well stocked kitchen, you probably have what you need on hand.
There are many variations on the theme. This one is a little on the spicy side and what I like to use. If it is too spicy for your tastes, you can omit the allspice and/or increase the ratio of cinnamon.
4 teaspoons Cinnamon
2 teaspoons Ginger
2 teaspoons Nutmeg
1 teaspoon Allspice
1 teaspoon Cloves
